Salted Caramel Peanut Butter Ritz Icebox Cake

Ingredients

1 cup creamy peanut butter
1 cup heavy cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup salted caramel sauce
2 sleeves Ritz crackers
Sea salt for garnish

Directions

In a large mixing bowl, combine the peanut butter, heavy cream, powdered sugar, and vanilla extract. Use an electric mixer to beat until smooth and fluffy.

Spread a thin layer of the peanut butter mixture on the bottom of a 9×13-inch baking dish.

Place a layer of Ritz crackers over the peanut butter mixture, covering the bottom of the dish.

Spread a third of the remaining peanut butter mixture over the crackers, followed by a drizzle of salted caramel sauce.

Repeat the layers two more times, ending with a layer of the peanut butter mixture and a generous drizzle of caramel sauce on top.

Sprinkle a pinch of sea salt over the top layer.

Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the cake to set.

Slice and serve chilled, enjoying the creamy, crunchy, sweet, and salty goodness.

Variations & Tips

For a nut-free version, substitute the peanut butter with sunflower seed butter or cookie butter. You can also add a layer of sliced bananas or strawberries between the cracker layers for a fruity twist. If you prefer a chocolatey touch, sprinkle some mini chocolate chips on top before serving. For a more indulgent dessert, use chocolate-covered Ritz crackers.
