Lemon Cream Cheese Bread Loaf

Ingredients

1/2 cup (113g) unsalted butter, softened
4 oz (113g) cream cheese, softened
1 cup (200g) granulated sugar
2 large eggs
1 tablespoon lemon zest
1/4 cup (60ml) fresh lemon juice
1 1/2 cups (190g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (120ml) buttermilk

Directions

Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

In a large bowl, cream together the butter and cream cheese until smooth and fluffy.

Add the sugar and beat until light and well combined.

Mix in the eggs, one at a time, ensuring each is fully incorporated before adding the next.

Stir in the lemon zest and lemon juice.

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the flour mixture.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Variations & Tips

For a more pronounced lemon flavor, consider adding a lemon glaze by mixing powdered sugar with lemon juice and drizzling it over the cooled loaf. You can also incorporate poppy seeds into the batter for a delightful texture contrast. If you’re feeling adventurous, try substituting the lemon with orange or lime for a different citrus twist. For a healthier option, replace half of the all-purpose flour with whole wheat flour, and reduce the sugar slightly.
