Greek Feta Roast Potatoes
Ingredients:
2 lbs baby potatoes, halved
2 tbsp olive oil
1 tsp dried oregano
1/2 tsp garlic powder
Juice of 1 lemon
Salt and black pepper to taste
1/2 cup crumbled feta cheese
2 tbsp chopped fresh parsley
Optional: Kalamata olives, sliced red onions for garnish
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss halved potatoes with olive oil, oregano, garlic powder, lemon juice, salt, and pepper until well coated.
Spread potatoes in an even layer on the baking sheet. Roast for 30–35 minutes, flipping halfway through, until golden and crispy on the edges.
Remove from oven and immediately sprinkle with crumbled feta.
Garnish with fresh parsley and optional olives or red onions before serving.
Serve warm as a side dish or enjoy as a light vegetarian meal.
