Semolina Biscuits: Crisp, Buttery, and Perfectly Golden

Ingredients
1 cup (125g) all-purpose flour

1 cup (160g) fine semolina (suji)

1/2 cup (100g) sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup (170g) unsalted butter, softened

1 teaspoon vanilla extract (optional)

2–3 tablespoons milk (as needed)

Instructions
Preheat the oven.
Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix dry ingredients.
In a large bowl, combine flour, semolina, sugar, baking powder, and salt. Stir until well blended.

Add butter and flavoring.
Add the softened butter and vanilla extract (if using). Mix with your hands or a spoon until the mixture forms coarse crumbs.

Form the dough.
Gradually add milk, one tablespoon at a time, until a soft, smooth dough forms. It should not be sticky — just firm enough to shape.

Shape the biscuits.
Roll the dough into small balls or flatten it slightly with your palms. You can also roll the dough and cut it into circles with a cookie cutter for an even shape.

Bake.
Place the biscuits on the prepared baking sheet, spacing them slightly apart. Bake for 15–18 minutes or until lightly golden around the edges.

Cool and serve.
Let the biscuits cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.

Tips or Serving Suggestions
For a richer flavor, add a pinch of cardamom powder or grated lemon zest to the dough.

Sprinkle a little sugar or crushed nuts on top before baking for extra texture.
