Cucumber Weight-Loss Salad

Ingredients:

2 cups shredded cabbage (green or Napa)

1/2 cucumber, thinly sliced

1/2 red bell pepper, thinly sliced

2 green onions, chopped

1/4 tsp black pepper

1 garlic clove, minced

Juice of 1/2 lemon

1 tbsp olive oil

Chopped parsley or dill (optional)

Directions:

1.
Wash and slice all your vegetables. Place them in a large salad bowl.

In a small bowl, whisk together lemon juice, olive oil, minced garlic, and black pepper.

3.
Pour the dressing over the vegetables. Toss everything together until evenly coated.

4.
Serve immediately or refrigerate for 15 minutes for even more flavor.
