1½ pounds (680 g) baby potatoes (Yukon Gold or red potatoes work best)
2 tablespoons butter, melted
2 tablespoons olive oil
Salt and black pepper, to taste

Instructions
1. Prepare the Potatoes
Preheat oven to 425°F (220°C).
Place baby potatoes in a pot, cover with cold salted water, and bring to a boil.
Cook until fork-tender, about 15–20 minutes, then drain well.
Place potatoes on a baking sheet lined with parchment paper.
Use a fork or the bottom of a glass to gently smash each potato until flattened but still intact.
