Slow Cooker Beer Bratwurst with Onions & Peppers

Weeknight dinners can be such a challenge with our busy schedules, can’t they? That’s why I love my slow cooker! This Slow Cooker Beer Bratwurst with Onions & Peppers is the ultimate comfort food, perfect for those of us living in the Midwest. The beer adds a rich flavor to the mix, and the combination of bratwurst, onions, and peppers is simply irresistible. It’s like a little taste of a summer cookout, even on a chilly fall evening.

This dish pairs beautifully with some classic comfort sides. Think along the lines of creamy mashed potatoes, crispy potato wedges, or a simple green salad for a bit of freshness. If you’re feeling extra indulgent, some gooey macaroni and cheese would also be a great companion to this hearty meal. And don’t forget your favorite mustard or sauerkraut on the side for some added zing!

1 (12 oz) bottle of beer (your choice)
1 tablespoon brown sugar
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika

2. Arrange the bratwursts on top of the onions and peppers.

3. In a small bowl, combine the minced garlic, brown sugar, salt, pepper, and paprika.

4. Pour the beer into the slow cooker over the bratwursts and vegetables.

5. Sprinkle the garlic and spice mixture evenly over the top.

6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the bratwursts are fully cooked and the vegetables are tender.

7. Serve the bratwursts with the bell peppers and onions, and enjoy with your favorite condiments.

Variations & Tips

If you’re not a fan of beer, you can easily substitute it with chicken or vegetable broth for a milder flavor. You can also switch up the veggies—try adding some sliced mushrooms or even some shredded cabbage for a different texture. And if you’re looking to cut down on prep time in the evening, chop the vegetables and mix the spices the night before. That way, all you have to do is pop everything into the slow cooker in the morning!
