Roasted Cauliflower and Mushrooms with Parsley

Ingredients:

1 medium head of cauliflower, cut into florets
200g mushrooms, sliced
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Optional: Grated Parmesan cheese for added flavor

Instructions:

Preheat your oven to 200°C (400°F).
In a large bowl, toss the cauliflower florets and sliced mushrooms with olive oil, garlic powder, dried thyme, salt, and pepper until everything is well coated.

Spread the cauliflower and mushrooms evenly on a baking sheet lined with parchment paper. Make sure they are in a single layer for even roasting.

Roast the vegetables in the oven for 25-30 minutes, or until the cauliflower is golden and crispy at the edges and the mushrooms are tender.

Once roasted, remove from the oven and sprinkle with fresh chopped parsley.
