Hearty vegetable soup

When temperatures drop or you’re just looking for a nourishing dish, nothing beats one hearty vegetable soup. Rich, comforting and incredibly healthy, this homemade soup transforms simple vegetables into a complete and tasty meal. Get ready to discover a recipe that is as easy as it is addictive!

Ingredients for a hearty vegetable soup

2 tablespoons olive oil

1 yellow onion, chopped

2 cloves garlic, chopped

3 carrots, cut into slices

2 stalks of celery, cut into small cubes

2 medium potatoes, in cubes

1 zucchini, in half slices

1 leek, washed and thinly sliced

150 g green beans, cut

150 g peas (fresh or frozen)

1 can (400 g) crushed tomatoes

1 liter of vegetable broth (homemade or cube)

1 bay leaf

1 teaspoon of dried thyme

Salt and pepper to taste

Optional: a handful of pasta (such as small shells or orzo) or rice

Necessary utensils

A large pot or casserole dish

A cutting board

A good kitchen knife

A wooden spoon

Step-by-step preparation instructions
Step 1: Brown the herbs
In a large casserole dish, heat the olive oil over medium heat. Add the onion and garlic, then fry them for 2-3 minutes until they become translucent and give off a good scent.

Step 2: Add the hard vegetables
Add the carrots, celery and potatoes. Brown everything for 5 minutes to develop the aromas. Salt and lightly pepper.

Step 3: Build the base of the soup
Add the zucchini, leek, green beans and peas. Then pour in the crushed tomatoes, vegetable stock, bay leaf and thyme. Mix well.

If you want an even heartier soup, add the pasta or rice 10 minutes before the end of cooking. Adjust the broth if necessary to maintain a nice consistency.
