Easy Pinto Beans, Green Chile and Beef Soup

Ingredients for Easy Pinto Beans Green Chile and Beef Soup
To make this flavorful soup, you’ll need:
For the Soup:
1 lb (450g) ground beef (or chuck roast, diced small)
2 tbsp olive oil
1 small onion, chopped
3 cloves garlic, minced
1 (4 oz) can diced green chiles
1 (15 oz) can pinto beans, drained and rinsed
1 (15 oz) can diced tomatoes
3 cups beef broth
1/2 tsp ground cumin
1/2 tsp chili powder
1/2 tsp oregano
Salt & black pepper, to taste
1/4 cup chopped fresh cilantro (optional)
Optional Toppings:
Shredded cheddar
Sour cream
Crushed tortilla chips
Lime wedges
Note: You can swap pinto beans with black beans or even kidney beans — equally delicious.
Directions:
Step 1 – Sauté the Aromatics
In a large pot over medium heat, heat olive oil.
Add chopped onion and sauté for 4–5 minutes, until soft.
Add garlic and cook for 30 seconds until fragrant.
Step 2 – Brown the Beef
Add the ground beef and cook until browned, breaking it up with a spoon (7–8 minutes).
Season with cumin, chili powder, oregano, salt, and pepper.
Step 3 – Simmer the Soup
Add green chiles, diced tomatoes, pinto beans, and beef broth.
Bring to a boil, then reduce heat and let simmer for 25–30 minutes.
Taste and adjust seasoning. Stir in fresh cilantro before serving.
