Easy Ginger Soy Cod
Flaky Cod Fillets in Sweet and Savory Ginger Soy Glaze
Ingredients:
4 cod fillets (about 5–6 oz each)
Salt and black pepper, to taste
2 tablespoons olive oil (or sesame oil for extra flavor)
3 tablespoons low-sodium soy sauce
1 tablespoon honey
1 tablespoon rice vinegar (or lime juice)
1 tablespoon freshly grated ginger
2 garlic cloves, minced
1 teaspoon cornstarch (optional, for thickening sauce)
2 green onions, sliced (for garnish)
1 teaspoon toasted sesame seeds (optional, for garnish)
Cooked white or jasmine rice, for serving
Directions:
Season the Cod:
Pat cod fillets dry with paper towels. Lightly season both sides with salt and pepper.
Make the Ginger Soy Sauce:
In a small bowl, whisk together soy sauce, honey, rice vinegar, grated ginger, garlic, and cornstarch (if using). Set aside.
Cook the Cod:
Heat olive oil in a large skillet over medium heat. Add cod fillets and sear for about 3–4 minutes on one side until golden brown. Flip and cook another 3 minutes, or until the fish flakes easily with a fork.
Add Sauce and Glaze:
Reduce heat to low. Pour in the ginger soy mixture. Spoon the sauce over the fish as it simmers and thickens slightly (1–2 minutes). Remove from heat.
Serve:
Plate the cod over hot rice. Drizzle with extra sauce from the pan. Garnish with sliced green onions and sesame seeds if desired. Serve immediately.
