Denver Omelet Keto Bites

Denver omelet keto bites are a wonderful, low-carb way to start your day or provide a filling snack. Originally inspired by the classic Denver omelet, these bites are perfect for anyone following a ketogenic diet or just looking for a tasty, protein-packed treat. The combination of bell peppers, ham, and cheese makes them not only delicious but also visually appealing, which is always a hit with the kids.

These Denver omelet keto bites pair wonderfully with a fresh, crisp side salad or a serving of avocado slices. For breakfast, consider adding a side of bacon or sausage to round out the meal. If you’re making these for a brunch gathering, a fruit platter with berries and melon can provide a delightful contrast to the savory flavors of the bites.

Denver Omelet Keto Bites

Ingredients

6 large eggs
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1/2 cup diced ham
1/2 cup shredded cheddar cheese
1/4 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 tablespoon olive oil or cooking spray

Directions

Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with olive oil or cooking spray.

In a large mixing bowl, whisk together the eggs and heavy cream until well combined.

Stir in the green and red bell peppers, diced ham, shredded cheddar cheese, salt, black pepper, garlic powder, and onion powder.

Pour the mixture evenly into the prepared muffin tin, filling each about 3/4 full.

Bake in the preheated oven for 18-20 minutes, or until the eggs are fully set and the tops are lightly golden.

Allow the keto bites to cool in the muffin tin for a few minutes before removing.

Serve warm and enjoy!

Variations & Tips

For a spicier kick, you can add a diced jalapeño or a pinch of red pepper flakes to the mixture. For picky eaters, consider swapping the bell peppers for a different veggie they enjoy, such as spinach or broccoli. To make these bites dairy-free, you can use coconut milk instead of heavy cream and a dairy-free cheese substitute. Don’t hesitate to experiment with different types of meats, like cooked sausage or turkey bacon, for some variety.
