Ingredients:
For the Salad:
½ red cabbage (300g), thinly sliced

½ green cabbage (300g), thinly sliced

1 cucumber, sliced

1 yellow chili, thinly sliced

1 onion, thinly sliced

1 tomato, diced

1 green apple, diced

1 carrot, grated

Fresh parsley & dill, chopped

For the Dressing:
4 tbsp Greek yogurt (120g)

Juice of ½ lemon

1 tbsp mustard

2 cloves garlic, minced

½ tsp salt

⅓ tsp black pepper

For the Herb Oil Drizzle:
2 tbsp olive oil

1 clove garlic, minced

¼ tsp black pepper

Chopped parsley & dill

For the Garlic Toast:
Bread slices

Olive oil

1 clove garlic, minced

Instructions:

Prepare the Salad:

In a large bowl, combine red cabbage, green cabbage, cucumber, chili, onion, tomato, apple, and carrot.

Make the Dressing:

In a small bowl, whisk together Greek yogurt, lemon juice, mustard, minced garlic, salt, and pepper.

Pour over the salad and toss well. Let it marinate for 10 minutes.

Prepare the Garlic Toast:

Preheat oven to 200°C (400°F).

Brush bread slices with olive oil and rub with minced garlic.

Bake for 5-7 minutes until golden and crispy.

Make the Herb Oil:

Mix olive oil, minced garlic, black pepper, parsley, and dill in a small bowl.

Serve:

Drizzle the herb oil over the salad.

Enjoy with warm garlic toast on the side!
