Description
This Crispy Potato and Bacon Sheet Pan is a savory, crispy, and flavorful dish that combines perfectly roasted potatoes with the rich, smoky taste of bacon. The sheet pan method makes it easy to prepare a hearty meal with minimal cleanup, making it a go-to for busy weeknights or weekend brunches. The crispy potatoes and bacon are seasoned with a blend of herbs and spices, creating a delightful combination of textures and flavors that everyone will enjoy.
Ingredients
1 lb baby potatoes (halved or quartered)
6 slices of bacon, chopped into small pieces
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika (or regular paprika)
½ tsp dried rosemary (optional)
Salt and pepper to taste
Fresh parsley (optional, for garnish)
Instructions
Preheat the Oven: Preheat your oven to 425°F (220°C).
Prepare the Potatoes: Wash and halve or quarter the baby potatoes (depending on their size). Pat them dry with a paper towel to remove excess moisture.
Season the Potatoes: In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, smoked paprika, rosemary (if using), salt, and pepper. Make sure the potatoes are evenly coated.
Prepare the Bacon: Cut the bacon into small pieces and scatter them over the seasoned potatoes on the sheet pan.
Bake: Spread the potatoes and bacon evenly in a single layer on a baking sheet. Place the sheet pan in the oven and bake for 25–30 minutes, stirring halfway through to ensure even cooking. The potatoes should be golden and crispy, and the bacon should be crispy as well.
Finish and Serve: Once done, remove from the oven. Garnish with fresh parsley if desired and serve hot.
Tips
Crispier Potatoes: For extra crispy potatoes, you can parboil the potatoes in boiling water for 5-7 minutes before seasoning and roasting. This helps the outside get even crispier while the inside stays tender.
Bacon Options: You can use turkey bacon or a plant-based bacon substitute if you prefer a leaner or vegetarian option.
Other Vegetables: Add other vegetables like bell peppers or onions to the sheet pan for added flavor and color.
Pre-cut Potatoes: If you’re short on time, you can buy pre-cut or pre-halved potatoes for a faster prep.
Corrections
Ensure you’re not overcrowding the sheet pan. If the potatoes are too close together, they may steam instead of crisping up. Spread them in a single layer with some space between each piece.
If you want extra crispiness, avoid using too much olive oil. Just enough to coat the potatoes will suffice for crisp results.
