Coconut Curry Chicken Meatballs for a Deliciously Unique Meal
Ingredients:
1 lb (450 g) ground chicken
1/2 cup breadcrumbs
1/4 cup green onions, chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
1 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can (14 oz) coconut milk
2 tablespoons red curry paste
1 tablespoon soy sauce
Fresh cilantro for garnish
Lime wedges for serving
Directions:
In a large bowl, combine the ground chicken, breadcrumbs, chopped green onions, minced garlic, minced ginger, curry powder, salt, and black pepper. Mix until well combined.
Form the mixture into small meatballs, about 1 inch in diameter.
In a large skillet, heat a bit of oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
In the same skillet, pour in the coconut milk, red curry paste, and soy sauce. Stir to combine and bring to a gentle simmer.
Return the meatballs to the skillet, cover, and let them cook in the sauce for an additional 10-15 minutes until cooked through and infused with flavor.
Garnish with fresh cilantro and serve with lime wedges.
