Ravioli Tomatoes Asparagus Garlic and Herbs

Ingredients:
1 tablespoon olive oil
1 pound asparagus, ends trimmed and cut into 2-inch pieces
2 cups cherry tomatoes, halved
3 cloves garlic, minced
1 package ravioli (about 12 oz), cooked according to package instructions
1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)
1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)
Salt and pepper to taste
Parmesan cheese for garnish (optional)
Instructions:
1. Prepare the Ravioli:
Cook the ravioli according to the package instructions. Drain and set aside.
2. Sauté the Vegetables:
– In a large skillet, heat 1 tablespoon of olive oil over medium heat.
– Add the asparagus to the skillet and sauté for about 5-7 minutes until tender but still crisp. Add the garlic and cook for another 1-2 minutes until fragrant.
– Add the cherry tomatoes and continue to cook for 3-4 minutes, stirring occasionally, until the tomatoes soften and release their juices.
3. Combine the Ravioli:
Add the cooked ravioli to the skillet with the vegetables. Gently toss to combine, allowing the ravioli to absorb some of the flavors from the vegetables and garlic.
4. Add Herbs and Seasoning:
Sprinkle with fresh basil, oregano, salt, and pepper to taste. Toss again to evenly coat everything in the herbs and seasonings.
5. Serve:
Serve immediately, garnished with a little Parmesan cheese, if desired.
