Low Carb Fajita Chicken Bake
Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1 red bell pepper, diced
1 green bell pepper, diced
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
Directions
Preheat your oven to 375°F (190°C).
Place the chicken breasts in a baking dish and drizzle with olive oil.
In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, salt, and pepper. Sprinkle this spice mixture evenly over the chicken breasts.
Scatter the diced red and green bell peppers over the chicken.
Cover the dish with foil and bake in the preheated oven for 25 minutes.
Remove the foil and sprinkle the shredded cheddar and mozzarella cheese over the top.
Return the dish to the oven, uncovered, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.
For a crispy top, broil for an additional 2-3 minutes, watching closely to prevent burning.
Let the dish rest for a few minutes before serving.
Variations & Tips
For a spicier kick, add some sliced jalapeños or a pinch of cayenne pepper to the spice mix. You can also swap out the chicken for turkey or beef if you prefer. For a vegetarian version, replace the chicken with thick slices of portobello mushrooms or zucchini. To add a smoky flavor, consider using smoked paprika in place of regular paprika. If you’re a fan of herbs, a sprinkle of fresh cilantro or parsley just before serving can add a refreshing touch.
