Cheese Shrimp Penne Pasta with Spinach
A creamy, cheesy pasta loaded with succulent shrimp and fresh spinach—this dish is quick enough for weeknights but elegant enough for company.
Ingredients
12 oz penne pasta
2 tbsp olive oil
1 lb large shrimp, peeled and deveined
4 cloves garlic, minced
1/2 tsp red pepper flakes (optional)
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup grated Mozzarella cheese
2 cups fresh spinach leaves
Salt and pepper, to taste
Fresh parsley, chopped, for garnish
Optional: Add cherry tomatoes or sun-dried tomatoes for extra flavor.
Directions
Step 1: Cook the Pasta
Cook penne pasta according to package instructions until al dente.
Drain and set aside.
Step 2: Cook the Shrimp
In a large skillet, heat olive oil over medium-high heat.
Add shrimp and cook 2-3 minutes per side until pink and cooked through.
Remove shrimp and set aside.
Step 3: Make the Sauce
In the same skillet, add garlic and red pepper flakes (if using) and sauté 1-2 minutes until fragrant.
Stir in heavy cream and simmer 2-3 minutes until slightly thickened.
Add Parmesan and Mozzarella cheese, stirring until melted and smooth.
Step 4: Combine Pasta, Shrimp, and Spinach
Add cooked pasta, shrimp, and spinach to the skillet.
Toss to coat in the sauce and cook 1-2 minutes until spinach is wilted.
Season with salt and pepper to taste.
Step 5: Serve
