Oven-Fried Potatoes & Onions

Ingredients:
4 medium russet potatoes, peeled and sliced ¼ inch thick
1 large yellow onion, sliced
3 tablespoons olive oil (or melted butter for richer flavor)
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon black pepper
1 teaspoon salt (or to taste)
Optional: 1 teaspoon dried rosemary or thyme for extra flavor
Optional: Chopped parsley for garnish
Instructions:
Preheat Oven:
Preheat your oven to 425°F (220°C).
Prepare Vegetables:
In a large mixing bowl, toss the sliced potatoes and onions together.
Season:
Drizzle the olive oil over the vegetables. Add garlic powder, paprika, black pepper, salt, and any optional herbs. Toss well to coat everything evenly.
Arrange on Baking Sheet:
Spread the mixture in a single layer on a large baking sheet lined with parchment paper or lightly greased. Try not to overcrowd.
Bake:
Bake in the preheated oven for 35–45 minutes, flipping once halfway through, until potatoes are golden brown and crispy on the edges and onions are caramelized.
Serve:
Garnish with fresh parsley if desired. Serve hot as a side dish or hearty snack.
