Ingredients

For the Cake:
1 cup all-purpose flour

1 1/2 tsp baking powder

1/4 tsp salt

5 large eggs, separated

1 cup granulated sugar, divided (3/4 cup + 1/4 cup)

1/3 cup whole milk

1 tsp vanilla extract

For the Milk Mixture:
1 can (12 oz) evaporated milk

1 can (14 oz) sweetened condensed milk

1/2 cup heavy cream

1/2 cup strawberry puree (see below)

For the Strawberry Puree:
1 1/2 cups fresh strawberries, hulled

2–3 tbsp sugar (to taste)

1 tsp lemon juice

For the Topping:
1 1/2 cups heavy whipping cream

3 tbsp powdered sugar

1 tsp vanilla extract

Fresh strawberries, sliced (for garnish)

🧁 Instructions

1. Make the Cake:
Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

In a bowl, whisk flour, baking powder, and salt.

In a separate large bowl, beat egg yolks and 3/4 cup sugar until pale and thick. Stir in milk and vanilla.

Fold in the flour mixture gently.

In another bowl, beat egg whites to soft peaks. Gradually add remaining 1/4 cup sugar and beat to stiff peaks.

Gently fold egg whites into the batter. Pour into pan and smooth the top.

Bake for 25–30 minutes, or until a toothpick comes out clean. Let cool completely.

2. Prepare the Strawberry Puree:
Blend strawberries, sugar, and lemon juice until smooth.

Strain if desired (for a smoother texture).

Set aside 1/2 cup for the milk soak.

3. Make the Milk Mixture:
Whisk together evaporated milk, sweetened condensed milk, heavy cream, and the 1/2 cup strawberry puree.

4. Soak the Cake:
Poke holes all over the cooled cake with a fork or skewer.

Slowly pour the strawberry milk mixture evenly over the cake.

Cover and refrigerate for at least 4 hours (preferably overnight) to soak.

5. Make the Whipped Cream Topping:
Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.

Spread over the soaked cake.

6. Decorate:
Top with sliced strawberries and optional strawberry drizzle.
